Zucchini Fritters
Ingredients
- 2 medium-sized zucchinis grated which makes about 4 cups
- 1 teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon ground nutmeg
- ¼ cup all-purpose flour
- 1 garlic clove minced
- 2 large eggs
- 2 tablespoons vegetable oil
Method
- Grate the zucchini and transfer it to a fine mesh strainer.
- Season with salt and let stand for 15 - 30 minutes.
- Remove as much of the water from the zucchini by squeezing it with your hands.
- Add the drained zucchini to a bowl and add the rest of the ingredients.
- Mix to combine.
- Use a cookie scoop or two spoons and drop the batter into a frying pan that's been heated with a little cooking oil.
- Cook for 4 - 5 minutes on each side or until the fritters are crispy and golden brown.
- Transfer the fritters to a baking tray that's lined with paper towels to help absorb any excess oil.
- Keep the fritters warm in a preheated 250°F oven until ready to serve.
