Insider Tips from My Kitchen to Yours
✔️ DO use pumpkin purée (not pumpkin pie mix). Purée has no added sugar or spices, which gives you the right flavor and texture for light, fluffy muffins.
❌ DO NOT overfill the muffin cups. Filling them more than two-thirds full can cause the batter to spill over and bake unevenly.

Storage and Reheating Instructions
Refrigerate: Store any leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
Freezer: Freeze in an airtight container or zip top freezer bag for up to 3 months.
Thaw and Reheat: Thaw overnight in the refrigerator. To reheat, pop them in the microwave for 20-30 seconds.

Yes! While yellow cake mix works great for this recipe, you can substitute it with spice cake mix for even more fall flavor or a chocolate cake mix for a rich chocolate-pumpkin combination.
Using cupcake liners makes it easier to remove the muffins from the tin and keeps cleanup simple. If you don't have liners, you can grease the muffin tin with nonstick spray or butter.
