Step 1: Transform ordinary chicken breasts into thin, flavorful cutlets with my easy-to-follow Chicken Cutlet Mayonnaise Recipe (complete with step-by-step photos!). Next, place the Ritz crackers in a ziplock bag and crush them into crumbs using a meat mallet or rolling pin. Dip the cutlets into the beaten eggs, ensuring a thorough coating, before pressing them into the crushed Ritz cracker crumbs.

The secret behind this recipe is using buttery Ritz crackers and not bread crumbs.You'll need about 25 crackers to make one cup of cracker crumbs. There are 35 crackers in one sleeve of Ritz Crackers.
How to Brown the Chicken Cutlets
Step 2: Heat the butter and oil in a heavy skillet, ideally a cast iron one like my trusty Lodge. Brown the chicken cutlets for about 2 to 3 minutes per side, achieving a beautiful golden crust.
Baking Instructions
Step 3: Slide the cast iron skillet into a preheated 425°F oven and continue cooking until the chicken reaches a safe internal temperature of 165 degrees, as confirmed by my handy thermometer.
Step 4: Look how crispy the Ritz cracker crumbs cooked on the chicken cutlets. And because we start with thin chicken cutlets, dinner is ready fast. My chicken was completely cooked in 20 minutes!

Freezer: Flash freeze the cooked cutlets in a single layer on a baking sheet lined with parchment paper. Freeze for 1-2 hours, or until solid. Transfer the to a freezer-safe bag or container, separating layers with parchment paper to prevent sticking. Label with the date and freeze for up to 3 months.
Thaw and Reheat: Allow to thaw in the refrigerator overnight if there is time. Place the frozen or thawed cutlets on a baking sheet and bake for 10-15 minutes (if thawed) or 20-25 minutes (if frozen), in a preheated 400°F oven, flipping halfway through, until heated through and crispy.

Chicken Cutlets in Cast Iron Skillet Recipe

- 4 chicken cutlets thinly sliced
- 2 eggs
- 1 cup Ritz Crackers crushed
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- 2 tablespoons vegetable oil
- 1 tablespoon butter
Instructions
- Place the Ritz crackers inside a plastic bag and crush them using a rolling pin or meat mallet.
- Add the cracker crumbs to a shallow baking dish along with the Italian seasoning and garlic powder.
- Add the beaten eggs to another shallow baking dish.
- Dip the thin chicken cutlets in the eggs and then immediately in the cracker crumbs.
- Heat the oil and butter in the bottom of a heavy cast iron skillet.
- Add the chicken cutlets and cook for a few minutes on each side or until browned on each side.
- Place the cast iron skillet in a preheated 400 degree oven and continue to cook until they reach an internal temperature of 165 degrees.
- Remove from oven and serve immediately.
